Curried cauliflower bites

Curried cauliflower bites are delicious oven-baked vegetarian party snacks. Serve them with tikka masala & yogurt dip to increase their curry flavour.

Ingredients

  • 400 g cauliflower cut into small florets
  • 2 tbsp tikka masala paste reserve 1 tsp for dip
  • 6 tbsp Greek style plain yogurt reserve 4 tbsp for dip
  • 4 tsp lemon juice reserve 1 tsp for dip
  • 1 small red chilli deseeded & chopped
  • 40 g almonds chopped
  • Salt and pepper
  • 60 g breadcrumbs
  • 2 tsp extra virgin olive oil
  • Fresh coriander leaves

Instructions

  1. Preheat oven to 200°C fan. Line a large baking tray with greaseproof paper.
  2. In a large bowl mix cauliflower, tikka masala paste (reserving 1 tsp for dip), 2 tbsp yogurt, 3 tsp lemon juice, red chilli, almonds, salt and pepper.
  3. Once combined, transfer curried cauliflower mixture to lined baking tray and spread mix out so it cooks evenly. Bake in oven for 20 minutes. Remove from oven and allow to cool.
  4. Tip the cooled cauliflower mixture into a food processor and blitz until it forms a chunky paste. Transfer to a bowl.
  5. Put breadcrumbs in small bowl. Line baking tray with new piece of greaseproof paper.

  6. With wet hands shape the cauliflower mixture into twelve balls (these should be about golf-ball size) and put them on a plate. Wash and dry your hands before the next step.

  7. Coat each of the cauliflower bites with breadcrumbs and place on the baking tray. Drizzle with oil and bake in oven for 25 minutes. Remove from oven.
  8. Tikka masala & yogurt dip: in a small bowl, mix together 1 tsp tikka masala paste, 4 tbsp yogurt, 1 tsp lemon juice, salt and pepper. Garnish with fresh coriander leaves.
  9. To serve: eat the curried cauliflower bites hot or cold with tikka masala & yogurt dip.

Recipe Notes

Vegan-friendly option - substitute the Greek style yogurt with vegan plain yogurt and make sure the tikka masala paste is vegan.
