Smoked cheese toastie

This smoked cheese toastie is quick and easy to prepare. Great as comfort food for brunch, lunch or as a snack.

Ingredients

  • 40 g smoked cheddar vegetarian, grated
  • 20 g vintage cheddar vegetarian, grated
  • 25 g red onion peeled & chopped
  • 1 tomato sliced
  • 1 tbsp parsley chopped
  • 2 slices easy soda bread
  • Pinch of smoked paprika

Instructions

  1. Preheat the oven to 200°C Fan.
  2. Place one slice of soda bread on a baking tray and top with half of the cheese. Add the other slice on top and bake in the oven until the cheese has melted and the bread has started to brown.
  3. Remove from the oven and turn on your grill to high.
  4. Top the toastie with the remaining cheese and grill for 3 minutes. Remove it from under the grill and top the toastie with the tomato & red onion and sprinkle over the smoked paprika. Grill the toastie for a further 2 minutes. Remove from the grill and garnish with parsley.

Recipe Notes

Cheese - if you don’t have any smoked or vintage cheddar any other melty vegetarian cheese would work well.

Bread - I use my homemade easy soda bread in this recipe but you can use any leftover bread that you have such as sourdough or ciabatta.

Red onion - this can be left out of the recipe if you prefer or you could use chopped spring onions instead.
