What to cook in spring

Spring is here!

Have you ever wondered what to cook in spring?

We are very lucky here in Queensland, Australia because there always seems to be an abundance of fresh produce available all year round.

Spring is a beautiful time of the year anywhere in the world. In Australia, the weather starts to get warmer and the light seems to get brighter. You wake up to brilliant blue skies and dazzling sunshine that can’t help but make you smile.

Along with the lovely weather comes fresh and vibrant vegetables and fruit. What does spring taste like? I think the main flavours that capture the essence of spring are crisp green vegetables, juicy berries and bright-tasting citrus fruit. What do you think?

Lighter meals for warmer days

After eating dishes that are more robust over winter like stews, pasta, puddings and bakes, it is refreshing to prepare lighter meals when spring starts.

When the weather gets warmer we naturally feel less like hearty food and more like something fresher and lighter like salads, sharing plates and more vegetable-based dishes.
