Jam and apple tart is a tasty autumnal dessert made from shortcrust pastry, fruit jam and caramelised apple slices.
This tart is simple to make and it tastes great. Eat a slice of it for dessert or for afternoon tea. Serve it warm or cold, on its own or with some vanilla ice cream or custard.
Apple, jam and pastry
Traditionally, jam tarts are small, individual sweet treats made from pastry and jam. My recipe makes one large tart that is enough for four servings. I don’t use lots of jam in this recipe as I think it can make the dessert too sweet. If you do have a sweet tooth, feel free to increase the quantity of jam!
To make this tart, first you make a pastry case from shortcrust pastry. Then you spread jam over the base and top it with slices of caramelised Red Delicious apple. Sprinkle the tart with some sugar and bake it in the oven until it is golden.

Tips for busy cooks
If you don’t have time to make your own pastry, buy frozen shortcrust pastry instead.
Use any type of leftover jam in this recipe. I used a wild berry jam that went well with the taste of the apple.
- Dessert: serve a slice of this tart (warm or cold) on its own or with a scoop of vanilla ice cream.
- Afternoon tea: enjoy a piece of this tart with a cup of tea.

Jam and apple tart
Jam and apple tart is a tasty autumnal dessert made from shortcrust pastry, fruit jam and caramelised apple slices. Enjoy a slice with ice cream or custard.
- 10 g butter plus extra for greasing
- Plain flour for dusting surface
- 100 g shortcrust pastry *see Recipe Notes
- 60 g Red Delicious apple (approx. 1 small apple) *see Recipe Notes
- 100 g fruit jam
- 1 tsp brown sugar
Preheat oven to 200°C fan. Grease a 20cm diameter round & shallow pie dish with some butter.
Dust kitchen surface with flour and roll out pastry into a circle that is slightly bigger than the pie dish and is about 2mm in thickness. Transfer pastry to pie dish & gently press pastry into dish. Chill lined pastry dish in the fridge for 30 minutes.
Remove pastry from fridge. Prick pastry base with a fork several times. Cover with greaseproof paper and baking weights. Bake in oven for 15 minutes. Take out of oven and remove weights and greaseproof paper. Bake pastry in the oven for a further 5 minutes. Remove from oven.
Meanwhile, melt the remaining butter in a frying pan over a medium heat. Add sliced apples and caramelise them on both sides for about 3 to 4 minutes. Remove from heat.
Spread the jam over the cooked pastry base, top with caramelised apple slices and sprinkle over sugar. Bake in oven for 5 minutes or until the top of the tart is golden. Remove from heat.
Serve warm or cold.
*Shortcrust pastry - you can either make your own pastry by following my recipe for basic shortcrust pastry or use thawed frozen shortcrust pastry.
