What is salad cream?

This recipe is inspired by the taste of Heinz salad cream that I had when I was a child.

Salad cream is traditionally made by emulsifying egg yolks, vinegar and oil to produce a tangy dressing that is a lot runnier than mayonnaise.

You should make dill salad cream because it is:

  • Quick and easy to prepare: the only kitchen equipment you need is a stick blender or a food processor.
  • Tastes delicious: flavours of dill, lemon and mustard.
  • A basic recipe: use as a base to add whatever flavours you like for example you can add finely chopped fresh parsley instead of dill.
  • Versatile: great all-round condiment that goes well with eggs, salad and vegetables.

  • Dill
  • Crème fraiche

Tips for busy cooks

To save even more time you can use store-bought salad cream or mayonnaise and stir in a teaspoon of dried dill & a squeeze of lemon juice.

You can swap crème fraiche for sour cream if you prefer.

Serving suggestions:

  1. Vegetarian Scotch eggs: vinegar and Dijon mustard make this sauce a sharp yet creamy accompaniment to the richness of the eggs.
  2. Egg and cress sandwich: mix chopped hard-boiled egg and cress with the dill cream for a tasty sandwich filling.
  3. Potato salad: mix dill salad cream and sliced spring onions with cooked baby potatoes.

Ingredients

  • 1 large free-range egg hard-boiled, yolk only
  • ¼ lemon juice only
  • 2 tsp Dijon mustard
  • 1 tsp dried dill
  • ½ tsp caster sugar
  • 1 tbsp white wine vinegar
  • 80 ml crème fraiche
  • Salt and pepper
  • 60 ml extra virgin olive oil

Instructions

  1. Combine all ingredients apart from the oil in a food processor or with a stick blender in a beaker/bowl until smooth.

  2. Gradually add oil to the rest of the ingredients through chute of food processor or with a stick blender (while blending on a slow speed) until combined.

  3. To serve: eat with vegetarian Scotch eggs or drizzle some over a green salad.
